ASPECT
Golden, brilliant.
Fine and festive bubbles.
Reserved bead of foam.
NOSE
Radiant, source of intense emotions.
Fragrances of jammy red and black fruits, punctuated by subtle spices and highlighted by a spark of mint, captivating signatures of the Pinot Noir, exclusive varietal of the champagne.
Later, the touches of honey reveal the emerging maturity of the cuvée, result of 24 months of ageing on laths of the bottles before riddling and disgorgement.
PALATE
Magnificent tension at the opening, full of elegance, supported by the adjusted dosage with 5.5 g/L of sugar added at disgorgement, underlined by the delicate minerality.
Generous power, almost structured, the one of the Pinot Noir, definitely reinforced by the judicious fulfilment of the malolactic fermentation of the base wines.
We find again at the end the red fruits already perceived at the nose.
Impressive length on the palate.
For this Cuvée Contraste - Blanc de Pinot Noir - Extra Brut, last creation of the Champagne house Bauchet, Bruno Charlemagne, oenologist and cellar master, orchestrates with talent the blending of vintages (25% of reserve wines) and terroirs of the Côte des Bar (Bragelogne-Beauvoir and Bar-sur-Seine) and of the Mountain of Reims (Bisseuil), to stage the heady duality of the Pinot Noir, full of contrasts. Ideal from aperitif to meal, with a quail with grapes, for example.
